Beans and Rice

• 12 ounces smoked and spicy sausage, cut into bite-sized pieces
• 2 packages Dwight Yoakam's Bakersfield Biscuits™ brand Border Dips ™ beans, prepared according to package directions
• 2 cups shredded cheddar cheese
• 4 cups hot cooked rice

1. In a medium skillet, brown the sausage.
2. Add the prepared beans and cheese, mix. Continue stirring until heated through and cheese is melted.
3. Serve the bean mixture over the rice.
Yield: 6-8 servings.

Tortilla Bean Casserole

• 2 cups chopped onion
• 2 cups chopped green pepper
• 14 1/2 ounce can diced tomatoes (one can)
• 3/4 cup picante sauce
• 2 cloves garlic, minced
• 2 packages Dwight Yoakam's Bakersfield Biscuits™ brand beans, prepared according to package directions
• 1 16 oz. jar of mild salsa
• 12 6-inch corn tortilla
• 2 medium tomatoes, chopped
• 2 cups shredded lettuce
• 1 cup shredded cheddar cheese

Preheat oven to 350° F.
1. In a large skillet, combine the first 5 ingredients, bring to boil, reduce heat. Simmer for 5 minutes. Stir in prepared beans and salsa.
2. Spread one-third of the mixture over the bottom of a 3-quart rectangular baking dish. Top with six of the tortillas, overlapping as necessary. Add another one-third of the mixture; top with remaining tortillas and mixture.
3. Bake, covered for 30-35 minutes or until heated through. Let stand 10 minutes.
4. Top with tomatoes, lettuce and shredded cheese. Serve.
Yield: 6-8 servings.

Quick and Easy Tamale Pie

• 1 cup chopped green pepper
• 1/3 cup chopped onion
• 2 cloves garlic, minced
• 1 tablespoon soybean oil
• 2/3 cup vegetable juice cocktail
• 2 packages Dwight Yoakam's Bakersfield Biscuits™ brand Border Dips™ beans, prepared according to package directions
• 2 teaspoons chili powder

Preheat oven to 400° F
1. Grease a 10-inch quiche dish or a 2-quart square baking dish, set aside.
2. In a medium skillet, cook green pepper, onion and garlic in the oil until tender
3. Stir in the next five ingredients. Pour into the prepared dish.
4. Spread cheese on top of bean mixture.
5. Bake uncovered about 20 minutes or until golden brown.
Yield: 6 servings
